Mexican Lasagna (Kinda Low Carb)

Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 lb Ground Beef
  • 1 Small Onion
  • 1 cup bell peppers
  • 2 Tbsp Taco Seasoning
  • 1 tsp salt
  • ½ cup of water
  • 1 can black beans (drained) *Omit if wanting to lower carbs
  • 1 can rotel
  • 4 low carb tortillas (cut in squares for easy layering)
  • 1 can refried beans *Omit if wanting lower carbs
  • 4 cups of shredded cheese fresh shredded is best
Toppings (You pick your favorites!
  • Sour Cream
  • Pico de Gallo
  • Guacamole
  • Avocado
  • Cilantro
  • Jalapenos (Fresh or Pickled)

Equipment

  • 9x12 Casserole Dish

Method
 

  1. Preheat oven to 350 degrees.
  2. Heat large skillet on medium-high heat. Add Oil
  3. Sauté Onions and bell peppers until soft
  4. Brown hamburger meat, Drain and return to pan
  5. Add Water, taco seasoning, and salt
  6. Stir and let simmer for 2-3 minutes
  7. Add Rotel and black beans- Mix and warm through
  8. In a 9x13 casserole dish, spray with oil
  9. Layer tortillas, spread half refried beans, spread half of beef mixture, half the shredded cheese
  10. Repeat layers above
  11. Place in preheated oven for 30-40 minutes.
  12. Let cool for 5-10 minutes before serving
  13. Top with toppings of choice

Notes

Prepare ahead of time, cover and put in fridge. Cook for additional 10-15 minutes (use foil to keep cheese from getting too brown).
