Follow directions for Low Carb Mac & Cheese* see notes for link to Recipe
Heat stockpot on medium high heat
Add Olive Oil
Add diced onions
Add diced zucchini and yellow squash and cook until they start to get soft
Add beef and cook until all browned
Add Seasoning & mix well
Add can of rotel & red kidney beans mix well
Add Low Carb Mac & Cheese and mix well
Put lid on and let simmer on low for 15-20 minutes
Serve warm

Rotel – If you do not like the spice from Rotel, you can sub with Fire Roasted Tomatoes.Red Kidney Beans- Because beans are higher in carbs, you can eliminate this ingredient, or just avoid them when you are filling up your bowl. My husband and kids love beans, so we like this addition. Low Carb Mac & Cheese- follow my low-carb Mac & Cheese recipe. Super quick and easy. If you don’t want to be low carb, you can use the same recipe with your noodle of choice.Garlic, Onion, Black Pepper, and Sea Salt McCormick All-Purpose Seasoning -if you do not have this, you can use 1 tsp of garlic powder and 1 tsp of Italian seasoning. And add a little more salt and pepper to taste.
