Method
- Mix all Dry Breading ingredients
- Mix all wet breading ingredients
- Pat chicken dry
- Dredge each chicken piece in the wet mix
- Place each dredged chicken piece in dry breading mix and spoon dry mix on top, gently pressing down so breading sticks to bottom of chicken.
- Carefuly place on pan covered with foil (for mess free)
- Preheat Air Fryer, if needed
- Spray trays with non-stick spray
- Place chicken on Air Fryer trays
- Cook 400 for 15-20 minutes (may need to rotate or turnhalfway through)- Until chicken is browned and cooked through
- Move chicken pieces to foil lined baking sheet
- Spoon low carb marinara sauce on each chicken piece
- Sprinkle mozzarella cheese on top of each piece
- Place in oven on broil for 3-5 minutes- until cheese is melty and browned
- Serve warm.
Notes
If you do not have the McCormick seasoning- You can use half garlic powder and half onion powder.
Chicken Breasts- you can buy the already thin cut chicken breasts or you can take a thick chicken breast- cut in half and use a mallet to beat down the chicken to about ¼ -1/2 in thick. This allows for the chicken to cook through quickly and evenly
If you do not have an air fryer- you can use your Oven. bake at 350F for 20-25 minutes until chicken is cooked through.
