Low Carb Cheesy Chicken Parmesan

Ingredients
  

Breading- dry mix

Breading - wet mix

Chicken Parm Main Ingredients

  • 2 lb Chicken breasts thin cut * see notes
  • 1 Cup Low Carb Marinara Sauce
  • 2 Cups Mozzarella Cheese Shredded

Instructions
 

  • Mix all Dry Breading ingredients
  • Mix all wet breading ingredients
  • Pat chicken dry
  • Dredge each chicken piece in the wet mix
  • Place each dredged chicken piece in dry breading mix and spoon dry mix on top, gently pressing down so breading sticks to bottom of chicken.
  • Carefuly place on pan covered with foil (for mess free)
  • Preheat Air Fryer, if needed
  • Spray trays with non-stick spray
  • Place chicken on Air Fryer trays
  • Cook 400 for 15-20 minutes (may need to rotate or turnhalfway through)- Until chicken is browned and cooked through
  • Move chicken pieces to foil lined baking sheet
  • Spoon low carb marinara sauce on each chicken piece
  • Sprinkle mozzarella cheese on top of each piece
  • Place in oven on broil for 3-5 minutes- until cheese is melty and browned
  • Serve warm.

Notes

If you do not have the McCormick seasoning- You can use half garlic powder and half onion powder.
Chicken Breasts- you can buy the already thin cut chicken breasts or you can take a thick chicken breast- cut in half and use a mallet to beat down the chicken to about ¼ -1/2 in thick. This allows for the chicken to cook through quickly and evenly
If you do not have an air fryer- you can use your Oven. bake at 350F for 20-25 minutes until chicken is cooked through.
