Low Carb Cheesy Chicken Parmesan

Ingredients
  

Breading- dry mix
Breading - wet mix
Chicken Parm Main Ingredients
  • 2 lb Chicken breasts thin cut * see notes
  • 1 Cup Low Carb Marinara Sauce
  • 2 Cups Mozzarella Cheese Shredded

Method
 

  1. Mix all Dry Breading ingredients
  2. Mix all wet breading ingredients
  3. Pat chicken dry
  4. Dredge each chicken piece in the wet mix
  5. Place each dredged chicken piece in dry breading mix and spoon dry mix on top, gently pressing down so breading sticks to bottom of chicken.
  6. Carefuly place on pan covered with foil (for mess free)
  7. Preheat Air Fryer, if needed
  8. Spray trays with non-stick spray
  9. Place chicken on Air Fryer trays
  10. Cook 400 for 15-20 minutes (may need to rotate or turnhalfway through)- Until chicken is browned and cooked through
  11. Move chicken pieces to foil lined baking sheet
  12. Spoon low carb marinara sauce on each chicken piece
  13. Sprinkle mozzarella cheese on top of each piece
  14. Place in oven on broil for 3-5 minutes- until cheese is melty and browned
  15. Serve warm.

Notes

If you do not have the McCormick seasoning- You can use half garlic powder and half onion powder.
Chicken Breasts- you can buy the already thin cut chicken breasts or you can take a thick chicken breast- cut in half and use a mallet to beat down the chicken to about ¼ -1/2 in thick. This allows for the chicken to cook through quickly and evenly
If you do not have an air fryer- you can use your Oven. bake at 350F for 20-25 minutes until chicken is cooked through.
