Low Carb Broccoli & Ham with Mac & Cheese

Method
 

  1. Heat olive oil and butter on medium-high heat in a 4-5 qt stock pot
  2. Add onions – cook until translucent
  3. Add ham- cook until warmed through
  4. Add broccoli and stir well (the steam will help soften the broccoli)
  5. Stir in cubed cream cheese and. Mix until cream cheese is softened and well incorporated with broccoli and ham
  6. Add seasoning, broth, and heavy whipping cream
  7. Stir well and let the sauce thicken a bit
  8. Add mac & Cheese – stir well to combine
  9. Serve warm

Notes

Broccoli- I used fresh broccoli florets, but frozen will work just as good. I would defrost about half way in the microwave, then let it finish cooking in the pot.
