Low Carb Broccoli & Ham with Mac & Cheese

  • Heat olive oil and butter on medium-high heat in a 4-5 qt stock pot
  • Add onions – cook until translucent
  • Add ham- cook until warmed through
  • Add broccoli and stir well (the steam will help soften the broccoli)
  • Stir in cubed cream cheese and. Mix until cream cheese is softened and well incorporated with broccoli and ham
  • Add seasoning, broth, and heavy whipping cream
  • Stir well and let the sauce thicken a bit
  • Add mac & Cheese – stir well to combine
  • Serve warm

Notes

Broccoli- I used fresh broccoli florets, but frozen will work just as good. I would defrost about half way in the microwave, then let it finish cooking in the pot.
