Method
- In a large skillet or large pot, Heat up olive oil.
- Toss diced yellow squash in the pan. Cook until softened.
- Throw in the leftovers and mix. As it is heating up, mix to incorporate the squash. Once heated through, it is ready to serve.
Notes
For this example – We ONLY needed 1 extra squash to fluff it enough to serve 2 adults and 2 toddlers; however, if I was serving another adult or if we didn’t have as many leftovers, I may have added another squash or zucchini. You can make the best decision on volume, but this is the best way to FLUFF up leftovers.
