Keto/ Low Carb Granola Bars

Ingredients
  

  • 3 Cups Keto Granola (Such as NuTrail)
  • 3 Tbsp Chia Seeds
  • 4 Tbsp Cold Water
  • 1/2 Cup Nut Butter (such as Almond Butter) or 130g
  • 1 Tbsp Imitation Honey (Sugar Free)

Instructions
 

  • Preheat oven to 350F
  • In medium mixing bowl, combine chia seed and cold water, mix and set aside (set for about 3-5 min)
  • Prepare baking dish- (can use ¼ sheet pan or 8x8 or 9x9 baking dish) by spraying non-stick spray, laying down parchment paper, then spraying with non-stick spray again.
  • Add nut mix in a large mixing bowl
  • Add nut butter, honey to chia seed bowl and mix until fully combined
  • Combine the wet mix into the nut mix and mixwell. Use your hands if you need to
  • Spread mixture on the prepared baking sheet, I suggest spreading out mixture into to 8x8 or 9x9 large square
  • Bake for 30-40 minutes, until golden brown.
  • Carefully move granola (still on parchment) overto a cooling rack, let cool for 20-30 minutes
  • Cut into 12 squares.
  • Enjoy!

Notes

Do not fret if the bars start to crumble a bit when you start to cut into bars, that is OK. It still tastes amazing. I found only a little crumbling, and the bars mostly hold up.
