Method
- Preheat oven to 350F
- In medium mixing bowl, combine chia seed and cold water, mix and set aside (set for about 3-5 min)
- Prepare baking dish- (can use ¼ sheet pan or 8x8 or 9x9 baking dish) by spraying non-stick spray, laying down parchment paper, then spraying with non-stick spray again.
- Add nut mix in a large mixing bowl
- Add nut butter, honey to chia seed bowl and mix until fully combined
- Combine the wet mix into the nut mix and mixwell. Use your hands if you need to
- Spread mixture on the prepared baking sheet, I suggest spreading out mixture into to 8x8 or 9x9 large square
- Bake for 30-40 minutes, until golden brown.
- Carefully move granola (still on parchment) overto a cooling rack, let cool for 20-30 minutes
- Cut into 12 squares.

Notes
Do not fret if the bars start to crumble a bit when you start to cut into bars, that is OK. It still tastes amazing. I found only a little crumbling, and the bars mostly hold up.
