In medium mixing bowl, combine chia seed and cold water, mix and set aside (set for about 3-5 min)
Prepare baking dish- (can use ¼ sheet pan or 8x8 or 9x9 baking dish) by spraying non-stick spray, laying down parchment paper, then spraying with non-stick spray again.
Add nut mix in a large mixing bowl
Add nut butter, honey to chia seed bowl and mix until fully combined
Combine the wet mix into the nut mix and mixwell. Use your hands if you need to
Spread mixture on the prepared baking sheet, I suggest spreading out mixture into to 8x8 or 9x9 large square
Bake for 30-40 minutes, until golden brown.
Carefully move granola (still on parchment) overto a cooling rack, let cool for 20-30 minutes
Cut into 12 squares.

Notes
Do not fret if the bars start to crumble a bit when you start to cut into bars, that is OK. It still tastes amazing. I found only a little crumbling, and the bars mostly hold up.
