Sauté onion and both squash until onions are translucent and squash is soft
Stir in sausage and cook until sausage is warmed through
Stir in “rice”
Add in broth* See notes
Add seasonings and stir
Stir in chicken
Put lid on and let it simmer for 5-10 minutes.
Ready to eat.
Notes
Rice- Can use a frozen bag of riced cauliflower. I like to cook, per instructions before putting in the pot- simply because it makes it easier to stir. But you can just throw frozen riced cauliflower if you like. You can also use fresh riced cauliflower. Mccormick All Purpose Seasoning - I rave about this stuff; however, if you don't have it, you can use 1/4 tsp of each: salt, pepper, garlic seasoning, and Italian seasoning. Hearts of Palm is my family’s favorite rice replacement. The texture is more similar to rice, and it absorbs the seasonings of what you are using really wellChicken Broth- This is to keep your veggies and meat from burning. You can use more broth if you want more of a soup.Cajun Seasoning- You can use your favorite. Keep in mind these are usually very salty, so I don’t need to add any additional salt. If you like spicy, I recommend Tonys or Slap ya Momma brands also.
