In a ziplock bag, combine chicken and ΒΌ cup of preferred BBQ sauce. I like to let this marinate at least 30 minutes.
Preheat oven to 350 deg F
Grill chicken on outdoor grill or grill pan on stovetop for about 4-5 minutes on each side (making sure chicken is cooked to 175)
Put chicken on foil lined baking sheet
Using a kitchen brush or spoon, lightly coat chicken on the top side with the remaining 1/4 cup of bbq sauce.
put chicken in oven for 5 minutes to warm up the bbq sauce on top and let it caramelize a bit.
Let chicken sit on baking pan for 5 minutes before cutting into chicken. This keeps the chicken juicy by allowing juices to soak into chicken before the first cut.
Notes
Sometimes I get the chicken marinating in the morning so it marrying in the fridge all day (not necessary, but helps with the timing for dinner prep).If you want to be proactive and cook this chicken a an hour or so before dinner. I know all of our schedules can be crazy. I turn the oven off , cover the chicken with foil and let the chicken just sit in the oven until dinner time. I also do this if hubby is running late for dinner and I already had to feed the littles.
