I love a meal that makes my house smell AMAZING all day while it is cooking. This meal is so easy to throw together, cooks all day, low carb, and tastes so good! Loaded with Vegetables and with a creamy no-fail gravy. You won’t miss the high-carb potatoes.
INGREDIENTS
- Beef Shoulder/ Butt/ or Roast

- Yellow Onion
- Celery
- Carrots
- Radishes – This is a great potato replacement
- Musrooms
- Green Bell Pepper
- Salt & Pepper
- McCormick All Purpose Seasoning- Garlic, Onion, Black Pepper, and Sea Salt– This is my favorite seasoning to use in my beef dishes. If you don’t have this, you can use Garlic Powder and Onion Powder.
- Garlic Powder
- Worcestershire Sauce
- Beef Broth
The list above is what I highly recommend, of course, if you do not like or want to omit any of these, you can. The combination of all of these is really great! You won’t be disappointed, I promise.
No-Fail Gravy
I don’t remember where I found this trick, but this is an absolute no-fail gravy that is delicious. Once your roast is done, take about 1 cup of veggies and 1 cup of juices and blend until thick gravy appears. I like using my emulsion blender, but I have used my magic bullet also. You will get the same result, but be very careful because it will be HOT! The ingredients are from your pot roast! No extra ingredients or thickeners.

Low Carb/ Keto Pot Roast with Creamy No-Fail Gravy
Ingredients
- 3 lb Beef Shoulder/Butt/ Roast
- 1 Medium Yellow Onion Large Diced
- 3 Stalks Celery Sliced
- 3 Carrots Sliced
- 2 Cups Radishes Cut into bite size
- 1 Green Bell Pepper Large Diced
- 1 Cup Mushrooms Sliced
- 2 tsp McCormickGarlic and Onion, Black Pepper and Sea Salt All Purpose Seasoning
- 2 tsp Salt
- 2 tsp Pepper
- 1 tsp Garlic Powder
- 1/4 cup Worcestershire Sauce
- 1/2 cup Beef Broth
Instructions
- In Large crock pot, spray pot with non-stick spray – or usecrockpot liner
- Throw in chopped Onion, celery, radishes, carrots, bell pepper, mushrooms
- Place meat on top of veggies
- Sprinkle with seasonings, and add Worcestershire sauce and beefbroth
- Cover- Set on low for 8-9 hours. Or High for 3-4 hours.
- ENJOY THE SMELL of your kitchen
- Using 2 forks, shred your beef. Should be falling apart easily.
For the Gravy
- Once Roast is done,
- Spoon about 1 cup of veggies and 1 cup of the juices to a blender or a container
- Blend until thick, by using emulsion blender or blender of choice. *See Notes
- Plate Veggies and Meat then pour gravy on top or around. Serve warm.
