This Keto/Low Carb Chicken, Broccoli and rice dish is amazing and super easy to throw together on a busy night. The whole family will enjoy this creamy, cheesy, chicken and broccoli dish.
Looking for a quick, easy, healthy and delicious dinner that you can make in 30 minutes!? This is the one for you! A favorite in our house, and you can mix up the ingredients to what your family loves.
One Pot Dish!
If I could do less dishes, that is the route I want to go. This recipe is one of my favorites not only because it is delicious, but because it is less dishes to clean. This recipe is a one pot dish, if you have you chicken already cooked or if you have to cook your chicken, use the same skillet to cook your chicken, and the move it over to let it cool. The process will take about 20 minutes longer if you need to cook the chicken first.
Ingredients
All the ingredients below are items I usually have in my kitchen, so this makes for an easy dinner that I don’t have to do a lot of planning for.
- Chicken- You can use Chicken breasts, thighs, or rotisserie chicken to make this even easier. I had chicken in the freezer that I defrosted and marinated using my GO-TO grilled chicken marinade.
- Broccoli- I prefer fresh because I like a little crisp still in my broccoli, but frozen tastes great too!
- “Rice” – I used frozen riced cauliflower in this, but if my husband was eating with us, I probably would have used the Natural Heaven Hearts of Palm White Rice. Either one will work great!
- Onion- I like yellow onion, but you can use your favorite
- Cream Cheese
- Shredded Cheese- I always say fresh shredded is best, if you don’t have this cheese grater yet, you should get it! I used Colby, but you can use cheddar or your favorite cheese on hand.
- Heavy Whipping Cream
- Chicken Broth
- Seasonings- I used my favorite McCormick Himalayan Pink Salt with Black Pepper and Garlic All Purpose Seasoning and Black Pepper.

Super Easy Low Carb Chicken, Broccoli, “Rice” Skillet Meal
Ingredients
- 1 Tbsp Olive Oil
- ½ cup Yellow Onion- Diced
- 3-4 cups broccoli chopped into bite sizes* See Notes
- 1 12 oz bag of frozen Riced Cauliflower * See Notes
- 1.5 cups chicken broth separated * See Notes
- 4 oz Cream Cheese – Cubed
- 1 cup Heavy Whipping Cream
- 1.5 cups Cheese- Shredded -Separated * Fresh shredded is Best
- 1 tsp McCormick Himalayan Pink Salt with Black Pepper and Garlic All Purpose Seasoning
- 1 tsp Black Pepper
- 1 lb Cooked Chicken – diced * See Notes
Instructions
- Heat Large Skillet on medium High Heat with Olive Oil
- Add Onions- Cook until translucent
- Add Broccoli and Cauliflower and 1 cup chicken broth
- Put on lid and let veggies get soft and liquid to cook down (about 10 minutes)
- Add Cream cheese and stir until mixed well and incorporated with all veggies
- Add Heavy whipping cream, remaining ½ cup of chicken broth, seasonings, cooked chicken and 1 cup of cheese and stir well.
- Put lid on and let cook and simmer so that sauce cooks down, about 10 minutes.
- *Taste Test- Add salt and black pepper, if needed.
- Add remaining cheese on top, add lid and let melt
- Serve and enjoy!
Notes
Cauliflower – You can use fresh or frozen riced cauliflower. You could also use Hearts of Palm White Rice instead. Chicken Broth- I used this to cook and soften the veggies as well as flavor. You do not want this to be too watery, so if you are using less broccoli or cauliflower, reduce the amount of chicken stock.
