Leftovers- We all usually end up have them, some nights more than others. But what do you do with them? Do they go directly into the trash? Do they go into a container and hang out in the fridge for a few days? (Or weeks! – EEK!).
I try to re-purpose or FLUFF my leftovers for another dinner that week. It could just be me, but when I am able to properly feed my family with what we have in the fridge and NOT have to throw anything in the trash- that is a good accomplishment.
*Disclaimer – Not all of my leftovers get repurposed or fluffed. Sometimes- They do just end up in the Trash. And that is OK. I just make sure I cherish those days that I tackled the dinner week with using most of the items in my fridge. *
In this case, we had leftover Low Carb / Keto Spaghetti with meat sauce. and BOY was it tasty. The fact that everyone (even the toddlers) cleaned their plates. I knew I could do it a second day with little complaint – Yes, we have toddlers, and they complain. I am teaching them that leftovers are OK.
I had 2 leftover keto cheddar biscuits (which I saved for myself). I also made regular Tasty and HIGH Carb garlic bread for my husband and the girls.

Leftover Low Carb/ Keto Spaghetti Fluffed
Ingredients
- Leftover Low Carb/ Keto Spaghetti
- 1 Yellow Squash
- 1 Tbsp Olive Oil
Instructions
- In a large skillet or large pot, Heat up olive oil.
- Toss diced yellow squash in the pan. Cook until softened.
- Throw in the leftovers and mix. As it is heating up, mix to incorporate the squash. Once heated through, it is ready to serve.
