Do you have Leftover Ham and running out of ideas for dinner? This recipe is so quick and easy to throw together. I am a big fan of one-pot meals and this one is perfect! You can use your leftover ham from Thanksgiving or even deli-meat ham that you need to use up.
*DISCLAIMER – This is a 2-pot meal, if you include the pot that you made the mac & cheese in. All of the ingredients end up in 1 pot, and to me, the cleanup is still pretty easy.
INGREDIENTS
- Olive Oil
- Butter
- Yellow Onion
- Cups Chopped Ham (leftover ham is perfect)
- Cups broccoli florets chopped in bite size pieces ( I used fresh, but you can use frozen)
- Cream Cheese – This gives your dish a creamy texture and thickens up the sauce
- Chicken Broth
- Heavy Whipping Cream – more creamy texture!
- Pink Salt, Pepper, and Garlic McCormick All-Purpose Seasoning
- Black Pepper
- Pink Salt – This is my favorite salt!
- Paprika (optional)
- ¼ tsp slap ya momma seasoning *Optional for a bit of spice
- 1 batch of my low carb mac and cheese

Low Carb Broccoli & Ham with Mac & Cheese
Ingredients
- 1 Tbsp Olive Oil
- 3 Tbsp Butter
- 1/2 Medium Yellow Onion diced
- 2 Cups Ham chopped
- 3 Cups Broccoli florets* See Notes Chopped
- 4 oz Cream Cheese cubed
- 1 tsp Pink Salt, Pepper, and Garlic McCormick All-Purpose Seasoning
- 1 tsp Black Pepper
- 1/2 tsp Salt
- 1/2 tsp Paprika (Optional)
- 1/4 tsp Slap ya Momma Seasoning (optional) add more, if you want more KICK
- 1 BATCH Low Carb Mac & Cheese
Instructions
- Heat olive oil and butter on medium-high heat in a 4-5 qt stock pot
- Add onions – cook until translucent
- Add ham- cook until warmed through
- Add broccoli and stir well (the steam will help soften the broccoli)
- Stir in cubed cream cheese and. Mix until cream cheese is softened and well incorporated with broccoli and ham
- Add seasoning, broth, and heavy whipping cream
- Stir well and let the sauce thicken a bit
- Add mac & Cheese – stir well to combine
- Serve warm
Notes
Broccoli- I used fresh broccoli florets, but frozen will work just as good. I would defrost about half way in the microwave, then let it finish cooking in the pot.
