Mexican Lasagna with low-carb tortillas was so easy to whip up. Are you looking for another option for Taco Tuesdays? You can omit the beans in this recipe to have an even lower carb count.
Who doesn’t like Tortillas, taco meat, beans, and cheese? This recipe is easy, and delicious and the whole family will love it!
INGREDIENTS
- Ground Beef- You could also use ground turkey
- Yellow Onion – The yellow onions have less bite and are sweeter than the white onions.
- Bell Peppers- I like keeping a bag of frozen sliced bell peppers in the freezer and using them for recipes when I can cook them with the onions and meat mixture.
- Taco seasoning– This taco seasoning is a favorite, but taco seasoning packets will work fine also
- Black Beans – These can be omitted if you want to keep it lower in carbs. Or you can use Soy Black Beans
- Rotel – You could also use diced tomatoes with green chilis or just the diced tomatoes if you don’t want the spice.
- Low Carb Tortillas- Use your favorite low carb tortillas – Ole Xtreme Wellness has been a favorite of mine
- Refried Beans- This adds a great creamy flavor, but can be omitted if you want to keep it lower in carbs.
- Shredded Cheese- Cheddar or Colby are our favorites. Using freshly shredded cheese always tastes better and it is lower in carbs. I highly recommend getting this rotary cheese grater and shredding your cheese yourself. I love this Rotary Cheese Grater
TOPPINGS
Sour Cream
Pico de Gallo (check out my favorite recipe here)
Cilantro
Guacamole
Avacado
Jalapenos (Pickled or Fresh)
The Taco Meat!
Saute Onion and ground beef until beef is cooked through.
Drain fat.
Add Bell Peppers and cook until soft.
Add Taco seasoning and 1/2 cup water- Mix
Cover and let simmer for 10 minutes (let meat sauce thicken)
Add in Rotel and Black Beans (if using) – Mix
Put the lid back on and let simmer for another 5 minutes.
Remove from Heat
LAYERS
In 9×13 in a casserole dish, spray with non-stick spray
Start your layers:
- Tortillas
- Refried Beans (omit this step if want to reduce carbs)
- Taco Meat Mix
- Shredded Cheese
- Tortillas
- Refried Beans
- Taco Meat Mix
- Shredded Cheese
BAKING
In Preheated 350 Deg. Oven
Add Casserole (Mexican Lasagna)
Bake for 30 minutes.
Remove and let cool for 5-10 minutes before you serve.
TIPS
Need Lower Carbs? – Just remove the Beans. Soy Black Beans are low in carbs. If you can’t find them in your grocery, you can find them on Amazon.
Make ahead of time – Since I work from home, I was able to make this about an hour before I was ready to put in the over. So, I prepared the Mexican lasagna casserole dish, covered it, and put it in the fridge until I was ready to start baking. Because of this, I baked it covered in foil for the first 30 minutes, removed the foil, and continued baking for 10 minutes so that the cheese got all melty.

Mexican Lasagna (Kinda Low Carb)
Equipment
- 9×12 Casserole Dish
Ingredients
- 1 Tbsp Olive Oil
- 1 lb Ground Beef
- 1 Small Onion
- 1 cup bell peppers
- 2 Tbsp Taco Seasoning
- 1 tsp salt
- ½ cup of water
- 1 can black beans (drained) *Omit if wanting to lower carbs
- 1 can rotel
- 4 low carb tortillas (cut in squares for easy layering)
- 1 can refried beans *Omit if wanting lower carbs
- 4 cups of shredded cheese fresh shredded is best
Toppings (You pick your favorites!
- Sour Cream
- Pico de Gallo
- Guacamole
- Avocado
- Cilantro
- Jalapenos (Fresh or Pickled)
Instructions
- Preheat oven to 350 degrees.
- Heat large skillet on medium-high heat. Add Oil
- Sauté Onions and bell peppers until soft
- Brown hamburger meat, Drain and return to pan
- Add Water, taco seasoning, and salt
- Stir and let simmer for 2-3 minutes
- Add Rotel and black beans- Mix and warm through
- In a 9×13 casserole dish, spray with oil
- Layer tortillas, spread half refried beans, spread half of beef mixture, half the shredded cheese
- Repeat layers above
- Place in preheated oven for 30-40 minutes.
- Let cool for 5-10 minutes before serving
- Top with toppings of choice
