Now that we are starting to have cooler days, soups and stews are great additions to our weekly dinners. Ghoulash has been a favorite meal since I was little. It was one of those meals that I even made when I was a broke college kid. My friends loved coming over for dinner! Amazing flavor, filling, and a great alternative to the grilled cheese and ramen noodles. I have been able to make this dish low carb friendly which means I can enjoy this dinner several times a month. It is so easy and delicious.
Ingredients
- Ground Beef
- Yellow Onion
- Zucchini Squash
- Yellow Squash
- Red Kidney Beans * Optional- This one is higher in carbs, so can be eliminated. My kids love beans, so I keep them in this one.
- Rotel
- McCormick All Purpose Seasoning- Garlic, Onion, Black Pepper, and Sea Salt– This is my favorite seasoning to use in my beef dishes. If you don’t have this, you can use Garlic Powder and Onion Powder.
- Low Carb Mac & Cheese – My recipe is amazing! The fact that I have found the most amazing low carb noodles by Great Low Carb Bread Co, this mac and cheese really is the best and without the guilt.

Great Low Carb Bread Co has some great low-carb pasta and bread options. I personally love their regular elbow noodles, but they do have a variety box you can try some of their other low-carb options to see if you like them as much as I do.
Leftovers
This dish is wonderful the next day. So, if you are lucky enough to have leftovers, you will enjoy this meal multiple times. Also- If you may not have enough leftovers to serve the whole family dinner, you can always fluff it up with an additional zucchini while you are warming it up or throw together some of the low carb cheesy biscuits. I love having leftovers! I am lucky that my family also enjoys leftovers. Having the same meal 2 nights in a row is a winning meal in my book.

Low Carb Ghoulash with Zucchini and Squash
Ingredients
- 1 Tbsp Olive Oil
- 1 small Yellow Onion Diced
- 1 Medium Zucchini Diced
- 1 Medium Yellow Squash Diced
- 1 lb Ground Beef
- 1 Can Rotel *See notes
- 1 Can Red Kidney Beans *See notes
- 1 Batch Low Carb Mac & Cheese *See notes
- 2 tsp Garlic, Onion, Black Pepper, and Sea Salt McCormick All-Purpose Seasoning *See Notes
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Follow directions for Low Carb Mac & Cheese* see notes for link to Recipe
- Heat stockpot on medium high heat
- Add Olive Oil
- Add diced onions
- Add diced zucchini and yellow squash and cook until they start to get soft
- Add beef and cook until all browned
- Add Seasoning & mix well
- Add can of rotel & red kidney beans mix well
- Add Low Carb Mac & Cheese and mix well
- Put lid on and let simmer on low for 15-20 minutes
- Serve warm
