For some people, they could eat pasta for every meal. That is not me; however, I do enjoy mac & cheese, Especially when it is low carb and tastes delicious!! You gotta try it!
Low Carb Pasta- Gluten
I know, I know… Can it be true? A pasta that tastes like pasta and still be low carb? Let me tell you, YES! After A LOT of research, I have finally found the best low carb pasta that tastes just about like the real deal. This pasta is from Great Low Carb Bread Co. They have a lot of other low carb options on their website too, if you want to check them out. I do want to say that this pasta is not what I would consider “Keto”. This specific pasta does have Gluten. Which is why it probably tastes so good. The texture reminds me of whole wheat pasta.
Low Carb Pasta – Gluten Free
Now, if you do have a gluten sensitivity, there are a couple of other options; however, you won’t have that same “pasta” like texture such as the suggestion above. These options are still good, but just not “as good” in my opinion.
- Cauliflower pieces – Fresh & steamed until tender.
- Lulu Protein Pasta – This one tastes OK. I needed to cook it longer. If you try it. let me know what you think.
Ingredients
- Low Carb Pasta
- Shredded Cheese- You can use Cheddar or Monterrey or mix of your favorites
- I recommend shredding your own cheese. It is the lowest carb count and tastes the best! See the rotary grater that I use!
- Also- I use these produce bags for storage so that I do not waste expensive ziplocks.
- Butter
- Heavy Whipping Cream – Or Milk
- Salt
- Pepper

Low Carb Mac & Cheese
Ingredients
- 1.5 Cup Pasta
- 1/4 Cup Heavy Whipping Cream (HWC) or Milk
- 2 Tbsp Butter
- 1 Cup Cheddar Cheese
- Salt & pepper to taste
Instructions
- Cook pasta as directed
- Drain water
- Add butter in pot with pasta
- With stovetop on low, mix in HWC and cheddar cheese, salt and pepper
- It may take a few minutes to get the cheese melted and the HWC will cook down and mixed in.
- This will be ready when the pasta is creamy, cheesy goodness.
