A go-to quick breakfast! Breakfast ready in 2 minutes. Only around 1 net carb. You can feel guilt-free and satisfied with this easy and low-carb breakfast.
Deli Meat and Cheese
I like to buy my deli meats and cheeses directly from the deli counter. They are less processed, you can select the thickness, and it tastes better! My grocery actually has some pre-packed meats and cheese right next to the deli so it is easy to quickly grab instead of waiting for them to cut it for you.
Ingredients
- Large Egg
- Slice of Ham- Make sure it is low in sugar/low in carbs.
- Slice of cheese * you can omit this if you want to be dairy free
Cooking
You can cook your egg in a pan, in the microwave, or you can use your mini-dish griddle as I did. I like to break the yolk so that it cooks faster. I also add some salt and pepper (completely optional- but delicious).

This is optional, but you can heat up my slice of ham in the microwave (15-20 seconds), on your stovetop pan, or in your griddle.
Assembling
Because I am lazy, I literally heated up my ham on a paper towel, placed my egg on top, then my cheese (the heat from your ham and egg makes your cheese melty). Gently fold your ham/egg sandwich over, and you can easily eat it like a taco.
SIDES
Add some berries, low-carb toast, or even some low-carb granola to complete your meal.

Busy Mom Breakfast- Egg, Ham, and Cheese
Ingredients
- Large Egg
- Slice of Ham- Make sure it is low in sugar/low in carbs.
- Slice of cheese * you can omit this if you want to be dairy free
Instructions
- Heat up your pan or mini dash griddle
- Crack egg in griddle or pan- Break yolk and add salt and pepper
- Cook until yolk is cooked
- Heat up ham in microwave for 15-20 seconds
- Assemble by adding egg on top of heated ham slice, add cheese
- Carefully fold over to eat like a taco or eat with knife and fork.
