This Cajun Chicken, Sausage, and “Rice” dish is so easy and amazing! A one-pot dinner in under 30 minutes! Full of flavor and heartiness from the vegetables, your whole family will enjoy it.
Jump to RecipeI made up this recipe one night, honestly because I had leftover chicken and I didn’t know what to do with it. I always have zucchini and squash. so, I just started throwing things in the pot to see what made my dish look colorful. I realized the chicken wasn’t enough, so I chopped up some link sausage and immediately thought of a Cajun dish. I found my yummy Zatarain’s seasoning and went to town. Boy was this a winner!
One of the reasons this one is my personal favorite is because it is a way I can use up some leftover chicken. The rest of the ingredients are usually always on hand in my fridge and pantry.
Ingredients:
- Onion – I prefer yellow onions. They are sweet and have less bite than white or purple onions.
- Yellow Squash/Zucchini Squash- These are on my grocery list weekly. They go well with anything or even by themselves sauteed with butter and seasoning.
- Link Sausage – I always have this on hand because it is great in dishes like this, or grilled alone, or in a hot dog (whcih is my husbands favorite)
- Chicken- This can be breasts or thighs. You can use Grilled, baked, or rotisserie.
- “Rice” – You can use riced cauliflower (fresh or frozen), or one of our favorites is Natural Heavens Hearts of Palm White Rice. This one is a family favorite because the texture is closer to actual rice and it does a great job soaking in the seasonings from the dish.
- Chicken Broth – You can also use Veggie broth (Broths are always good to have on hand)
- McCormick Himalayan Pink Salt with Black Pepper and Garlic All Purpose Seasoning – If you haven’t tried this stuff, you should try it. It is my favorite seasoning! It goes well with everything!
- Cajun Creole Seasoning – You can use your favorite one here. I like the Zatarains for my family, but I have used a spicier ones like Slap ya Momma or Tonys before and they are also great options!
- Thyme – I really like this flavor , but f you don’t like thyme, you can omit. I just take a good pinch and crush in my fingers to release the flavor as I drop it in the pot.
Leftovers into a Second Dinner
This meal is so good, but it is only about 6 servings. If my husband doesn’t want to take the leftovers for lunch the next day, I like to transform the leftovers into a whole new dinner by fluffing it up. Fluffed-up dinners are my favorite because it is SO easy and hardly any extra work for that dinner.
How to Fluff! These are ways I would fluff up my dinner so that I can have a full serving for each of us the next night. You can use 1 or all of my suggestions, depending on how many people you need to serve. I would also just season to taste and add more broth if needed.
- Add more chicken or sausage, if you have any.
- Add more zucchini or squash, if you have any.
- Add a can of Fire Roasted Tomatos- Keep in mind the carb count goes up a little with tomatoes.
- Add a can of rinsed Red Beans – Keep in mind the carb count will go up with beans (I usually pick my out and give to my girls- they love beans!

Keto/Low Carb Cajun Chicken, Sausage, and “Rice”
Ingredients
- 1 Tbsp Olive Oil
- 1 medium onion – diced
- 1 yellow squash – chopped
- 1 zucchini squash -chopped
- 2-3 link sausage – chopped in bite size
- 9-12 oz Hearts of Palm Rice *See Notes
- 3 cups Chicken – cooked and chopped in bite size
- ½ -1 cup Chicken broth
- 1 tsp McCormickHimalayan Pink Salt with Black Pepper and Garlic All Purpose Seasoning *See Notes
- 1 Tbsp ZatarainsCreole seasoning * see notes *See Notes
- Pinch Thyme
Instructions
- In medium stock pot, heat up olive oil
- Sauté onion and both squash until onions are translucent and squash is soft
- Stir in sausage and cook until sausage is warmed through
- Stir in “rice”
- Add in broth* See notes
- Add seasonings and stir
- Stir in chicken
- Put lid on and let it simmer for 5-10 minutes.
- Ready to eat.
