I have made these a few times, and I really enjoy them. You won’t miss the granola at all! The crunchy, slightly chewy, nutty, sweet, and salty snack is amazing with a cup of coffee or tea.

Why this recipe is so easy! NuTrail Keto Granola
Keto Granola Mix, Such as NuTrail- I love this because it has all the nuts, seeds, and sweeteners already in there. This stuff is really good ALL on its own, so if you just use this post as inspiration to just go out and buy some NuTrail Keto Granola, you will not be disappointed. I just like a little more structure to my snack (like a bar or large granola pieces) instead of tiny crumbly pieces. Because of the already tasty keto nut mix, all I am adding is the sticky mixture to mold it into a square.
How only 3 net carbs?
I typically don’t add the carb counts to my recipes because depending on the brand and specific products you use, that will change the carb count. I don’t want to deceive you if you are doing strict carb counting and you expect to use what you have on hand and use the exact calculations that I have. When I am looking at someone’s keto/low carb recipes, I will take into consideration the brands that I have in my kitchen and estimate the carb count for myelf. The reason I wanted to count this one, in particular, is because I wanted to know how many bars to cut and how many bars I could have without going CRAZY and eating all of them. So, in this case, based on the exact ingredients that I used, it came to about 3.3 net carbs per bar. (40 net carbs for the whole recipe 12 bars).
Only a few ingredients
- Keto Granola Mix, such as NuTrail
- Chia Seed
- Cold Water
- Nut Butter (I used Almond butter- make sure it only has Almonds and salt)
- Imitation Honey (Sugar Free) – This stuff is good in tea or coffee also!
If you want to make this all from scratch:
Nut Mix/Dry Ingredients (use your favorite nut/seed mix)
- Brazil nuts
- Almonds
- Pecans
- Pistachio nuts
- Hazel Nuts
- Pumpkin seeds
- Toastes Coconut flakes
Wet Ingredients:
- Chia Seeds
- Cold Water
- Nut Butter
- Tbsp Sweetener
- Tbsp Keto Maple Syrup or Sugar Free Honey
- Tsp Vanilla Extract
- Pinch Salt
You can follow the directions for the rest of the recipe below to obtain the same tasty results.
Storage
Once fully cooled, I store mine in a sealed container on the counter for a week. (if it lasts that long). You can also store it in the refrigerator. These containers are my favorite! They are perfect for leftovers, baked goods, or if you want to send some food home with any of your family/friends after a get-together.
Helpful Tips
- Use a stand mixer or your hands when you start to mix the nut mixture and chia/nut butter mixture together. the spatula just seemed to take way too long.
- Keep an eye on the granola in the oven, each oven is different and you really want that golden brown look. You will also start to smell the ingredients get toasty.
- Let cool on a wire rack while still on the parchment paper. From my experience, this allows the heat to escape from the bottom without getting soggy.

Keto/ Low Carb Granola Bars
Ingredients
- 3 Cups Keto Granola (Such as NuTrail)
- 3 Tbsp Chia Seeds
- 4 Tbsp Cold Water
- 1/2 Cup Nut Butter (such as Almond Butter) or 130g
- 1 Tbsp Imitation Honey (Sugar Free)
Instructions
- Preheat oven to 350F
- In medium mixing bowl, combine chia seed and cold water, mix and set aside (set for about 3-5 min)
- Prepare baking dish- (can use ¼ sheet pan or 8×8 or 9×9 baking dish) by spraying non-stick spray, laying down parchment paper, then spraying with non-stick spray again.
- Add nut mix in a large mixing bowl
- Add nut butter, honey to chia seed bowl and mix until fully combined
- Combine the wet mix into the nut mix and mixwell. Use your hands if you need to
- Spread mixture on the prepared baking sheet, I suggest spreading out mixture into to 8×8 or 9×9 large square
- Bake for 30-40 minutes, until golden brown.
- Carefully move granola (still on parchment) overto a cooling rack, let cool for 20-30 minutes
- Cut into 12 squares.
- Enjoy!
