Since I started keto/low carb, not having bread was the biggest issue. I love sandwiches! This white bread (also called wonder bread) is the best recipe that is NOT eggy, and it really does taste like white bread. No more feeling guilty or that you are missing out on breakfast sandwiches, turkey and ham sandwiches, grilled cheese, or even use for your burger bun.
Mini Dash
I purchased my first mini dash waffle maker a few years ago. Shortly after that, I purchased a second one. Then I purchased a mini dash griddle. These little things are adorable and work great for making mini waffles, pancakes, cooking an egg, or in this case, my keto bread.
You can use this recipe using either a mini dash waffle maker or a mini dash griddle. The only difference is the texture of the bread. I personally like the waffle version because it has the “love pockets” to hold the butter, jelly, syrup, peanut butter, mayo, mustard, or your favorite condiment!
Ingredients
With this recipe having ONLY 5 ingredients, it is too easy to not make! You most likely have these ingredients on hand.
- Almond Flour – This is my favorite flour
- Baking Powder
- Egg White or Whole Egg. (I prefer to use egg white carton when making larger batches).
- Water
- Salt
Storing
If you decide to increase the recipe to make more than 2 wonder bread pieces, storing is really easy. Make sure you let them fully cool down before you store them. You can store in an airtight container in the fridge for up to 5 days, or you can store them in the freezer for up to 3 months. If you choose the freezer route, I recommend you cut pieces of wax or parchment paper to place in between each piece of bread and then store in a freezer ziplock bag. If storage space is not an issue, these canisters are recommended for storing in your fridge or freezer.
Re-Heating
I prefer to heat up my bread by popping them in the toaster. However, you could also just let it defrost on the counter for 15-20 minutes, then butter and toast them in a frying pan on the oven. Which is perfect for grilled cheese or toasting for a burger.

Best Keto White Bread – Using Mini Dash
Equipment
- MiniDash
Ingredients
- 3 Tbsp Almond Four
- 1 Tbsp Mayo
- 1/4 Cup Egg White Or Whole Egg
- 1/4 tsp Baking Powder
- 1 tsp Water
Instructions
- Mix all ingredients together.
- Plug in mini dash to heat
- Spray with non-stick spray
- Pour half of your batter into 1 waffle/griddle maker
- Let cook for 2-3 minutes – until waffle bread is firm
- Remove waffle
- Re-spray with non-stick spray
- Pour remaining batter
- Let cook for 2-3 minutes – until waffle bread is firm
- Remove waffle
- Both pieces are now sandwich ready!
Notes
- 2 Cups Egg White (I like to use egg white carton) / Or 8 large whole eggs.
- 1.5 Cups Almond Flour
- 1/2 Cup Mayo
- 2 tsp Baking Powder
- 2.5 Tbsp Water
