Chili is one of those meals that really warms the soul. Especially on a cold day, nothing can beat a good bowl of chili. I have mentioned in previous posts that I like to add vegetables to most of my recipes, even if they aren’t called for. For this one, I added yellow squash and spinach. A quick cook in your Instapot and DONE. Don’t forget to add your Fixin’s and you have an amazing bowl of goodness ready to go!
Inspiration
Although I do tweak recipes to fit my taste, I always like to give credit, where credit is due. Pinterest has been my source for 90% of my recipe inspirations. This recipe was inspired by a Pinterest pin I found from “I Save A to Z”. I have included her website, she has some other great low-carb recipes.
Instapot or not?
My Instapot is used mostly for Chili and hardboiled eggs (I’ll share this one with ya’ll soon). If you don’t have an instapot, You do NOT need one for this recipe. Although it does allow you to cook your dinner in 10 minutes, you can always do the same process in a dutch oven-type pot on the stove, or cook all your veggies and meat, then throw them and remaining ingredients in a slow cooker for 3-4 hours.
My Favorite Chili Fixin’s:
- Cheese – Fresh shredded cheese is always best. If you haven’t seen it yet, check out this rotary grater. I LOVE IT!
- Onions
- Sour Cream
- Avacados
- Pickled Jalapenos
- Fresh Cilantro
- Fresh Pico de Gallo- You are in luck- I have an amazing recipe right HERE.
- Pork Rinds – Just keep in mind they do get soggy quick, so eat fast, or keep them on top.
- Fritos- No Judgement Zone here. (obviously this would be for those days when you really need the REAL deal or for your husband and children)

The Best Low Carb / Keto Chili- Instapot
Ingredients
- 1 Tbsp Olive Oil
- 2 lbs Ground Beef
- 1 lb Ground Italian Sausage
- 1 Onion Medium
- 1 Yellow Squash Diced* Optional
- 3 Cups Chopped Spinach* Optional
- 4 Tbsp Chili Powder
- 1 Tbsp unsweetened cocoa powder
- 2 Tbsp Smoked Paprika
- 3 Tbsp Cumin
- 1 Tbsp Garlic Powder
- 1 tsp Dried Oregano
- 1 tsp Salt
- 1 tsp Pepper
- 2 Cups Beef Broth
- 15 oz can Fire Roasted Tomatoes
- 10 oz can Rotel
- 1/2 tsp Xanthan Gum* optional to add thickness
Instructions
- Turn on pot to sautee mode & Add Olive Oil
- Dice onion & throw into heated pot.
- *If addng squash- Dice and add into pot with diced onions
- Cook until onions are translucent and soft
- Toss in ground beef and sausage
- Cook until it is all browned
- *If adding spinach- chop and add into pot and stir
- Add the Chili Powder, Unsweetened Cocoa Powder, Smoked Paprika, Cumin, Garlic Powder, Dried Oregano, Salt, and Pepper. Stir until all combined
- Add Bone Broth, Fire Roasted Tomatoes and Rotel. Stir until all combined.
- * Add Xanthan if you want a thicker chili. Sprinkle and mix very well.
- Turn on instapot to manual HIGH presure cook for 10 minutes.
- You can do a quick release when done, or if you have time, let it slow release and let it continue to marry in the pot on warm until ready to serve.
- When ready- make sure you stir well before pouring into bowls
- Serve warm and top with your favorite fixin's!
