This soup is so easy, creamy, and flavorful. The creamy, garlic, roasted red peppers, celery, and spice from the Italian sausage is the perfect combination that will make you want more. If you are looking for the best soup for the cooler weather, this one is for you. We love it so much; we enjoy it in the warmer weather too.
Inspiration
I always tend to tweak recipes from when I originally found them and basically turn up the volume on veggies or in other areas that I personally like. As always, I like to give credit, where credit is due. My inspiration on this recipe came from this lovely blogger. You can look up the original recipe and try hers exactly how she has it or check out her other low-carb recipes.
The Ingredients
- Italian Sausage- You can use breakfast sausage- but I like the Italian flavor best
- Yellow Onion
- Celery – The celery flavor really stepped up this recipe – so I use about 4-5 stalks
- Mushrooms- This one is optional- But a great addition, if you love mushrooms as much as we do.
- Minced Garlic – I like the kind out of the jar or bottle (less mess and less garlic fingers)
- Roasted Bell Peppers– You can find these in a jar in large slices, or already in pieces.
- Cream Cheese
- Beef Stock
- Heavy Whipping Cream
- Spinach- I use about 3-4 cups of chopped spinach. I like the additional heartiness and color.
- I also want to note that I usually ALWAYS chop my spinach mostly because I don’t like getting a big glob of spinach. Persoanl preference, but I think my family also agrees that the chopped is better hidden and more appetizing as small pieces from your spoon to mouth.

Leftovers
If you are lucky enough to have leftovers, this one is even more amazing the next day. If you need to fluff it up so you can feed the whole family, you can add more spinach and/or cream. You could also whip up some of my cheddar cheese biscuits!

The Best Low Carb/ Keto Creamy Tuscan Soup
Ingredients
- 1 lb Italian Sausage
- 1 Yellow Onion, Diced Medium
- 4-5 Celery Stalks, Sliced
- 3 Tbsp Minced Garlic
- 1 Cup Mushrooms, sliced* Optional
- 1 Cup Fired Roasted Red Peppers Drained & cut into pieces
- 8 oz Cream Cheese, cubed
- 3 Cups Beef Stock
- 1 Cup Heavy Whipping Cream
- 3-4 Cups Spinach, Chopped
- Salt and Pepper to taste
Instructions
- Using a large stockpot, brown sausage on medium-high heat. Break up sausage with a spoon or a mix and chop utinsil. (I will have my favorite listed in the shopping section)
- Once browned, remove sausage and place in a bowl by using a slotted spoon so you leave the greasy goodness in the stock pot.
- Add Onions, celery, and mushrooms* (if using)
- Add in Garlic, mix and cook until fragrant
- Add Sausage back in with vegetables, add roasted red bell pepper and mix
- Stir in cream cheese so that it is melted between all of the meat and vegetables
- Turn heat to HIGH, While Stiring, stir in Beef broth until it comes to a rapid boil.
- Remove from heat, While still stirring, stir in Heavy Whipping Cream until well incorporated
- Turn heat to medium-low and add in chopped spinach. Mix and let cook until wilted and cooked into soup
- Taste- Add Salt and Pepper to taste, if needed
- Ready to serve, or let simmer on stove until ready to serve.
