This Low Carb Beef and Hearty Vegetable Soup is amazing! My whole family loves it! Even my toddlers get “happy plates” which means they eat all their dinner. This soup is full of flavor and the vegetables give a wonderful color and heartiness to the soup. It is also one of those that we have plenty of leftovers for the next day’s dinner also.
Ingredients
- Ground Beef
- Olive Oil
- Minced Garlic
- Onions
- Celery
- Carrots
- Green Cabbage
- Frozen veggie mix (optional- but highly recommend)
- Pink Salt, Pepper, and Garlic McCormick All-Purpose Seasoning
- Salt
- Pepper
- Beef Broth – Or veggie broth
Leftovers
If you are lucky enough to have plenty of leftovers or lunches or another dinner, enjoy! But if you need to fluff it up (or make it enough for a full dinner for your family)- Depending on how much you need to fluff, you can throw in another bag of frozen veggies, chop up zucchini or yellow squash, and add more broth. The soup sitting in the fridge overnight really allows the seasons to meld even more, so you may not even need to add additional seasonings. This is the best way to fluff up your dinner without having to toss it or create a whole new dinner.

If you check out my video below, you will see that I break up my beef with a meat chop and stir. If you don’t have one of these, you should! It is awesome when you want to quickly chop up ground beef, turkey, chicken, or sausage.
Sides with Soup
I don’t need anything with a soup like this. It is so good and filling just as it is. If you want something to soak up some of the juices, I recommend adding my Cheddar Cheese Biscuits. I usually have some butter crackers, for my family.

Low Carb Beef and Vegetable Soup
Ingredients
- Tbsp Olive Oil
- 1 lb Ground Beef
- 1 Medium Yellow Onion Diced
- 1 Tbsp Minced Garlic
- 3-4 Celery Sticks Sliced
- 3-4 Carrot Sticks Sliced
- 1/2 Medium Green Cabbage Diced
- 12-16 oz Frozen Veggie Mix
- 3 tsp PinkSalt, Pepper, and Garlic McCormick All-Purpose Seasoning
- 1 tsp Salt
- 1 tsp Pepper
- 4-5 Cups Beef Broth Or Veggie Broth
Instructions
- On Medium- High Heat, heat Olive Oil in a large Soup Pot
- Add Onions and Celery- Cook until fragrant and onions are translucent
- Add minced garlic- Cook until fragrant- a minute or 2.
- Add ground beef- Crumble beef using spoon or this amazing meat chop and stir
- Add remainder of chopped veggies- stir
- Add spices – Stir
- Add frozen veggies (if using* See Notes)
- Add 4 cups of broth
- Simmer for at least 30 minutes
- Serve warm
